Dahl – with chicken and roasted vegetables
My favourite cookbook of the moment is The Baby Led Weaning Cookbook. Anything I have made from this goes down well with both Robot and Dave. This recipe is also named “Easy Dahl”, technically I could use it next week on E, but I have a whole host of eggyness lined up! Here is loads more credit to Gill Rapley and Tracey Murkett.
- oil for frying
- 1-2 onions, chopped
- 2 garlic cloves
- 1/2 tsp tumeric
- 1/2 tsp ground cumin
- 1/2 tsp mild chilli powder or flakes (to taste)
- 1-2cm of grated ginger
- 225g yellow or red lentils rinsed thoroughly in cold water
- 1/2 tsp ground cinnamon
- approx 750ml water
- juice of 1/2 lemon
- 1tbsp fresh coriander
Heat the oil in a pan, add the onion and fry till soft. Add the garlic and fry for another minute or two then stir in the powdered spices and the ginger. Add the lentils and cinnamon, with enough water to cover them. Bring to the boil, stirring occasionally, then turn down the heat, cover and simmer for 25-30 minutes, continuing to stir occasionally until the lentils are soft but not mushy. Add the lemon juice and stir well. Sprinkle the chopped coriander and serve warm with other curries.
We added some chicken and roasted courgette/carrot to the meal at the end to give it an added touch, it also meant I didn’t have to make other curries as the recipe suggests. Served with pea rice, pitta and cucumber and yoghurt dip.
I really enjoyed making this, there is a lot of spices in it and we have a good stocked up spice rack which helps loads. We couldn’t do it without the help of Aldi! They have a great spice range which we’ve just discovered, we’ve opted to use them more now as they are a good price! Also their fresh herbs too. Thank you Aldi, cooking is more adventurous now.
The Robot really liked this meal too. He gobbled it up. It wasn’t as spicy as I normally like so is very mild. I guess you could add more chilli if you wanted too. Dave added various spices to his plate! Thank you baby led weaning for another nice meal!
