Tomato Chicken with Rice and Kale

If there is one thing my son the Robot loves it’s Tomato based meals.  They are his favourite. As long as there is tomato in it he will eat it.  Raw tomato is a no no though, don’t give this boy a tomato without it having been cooked.

This has inspired this new series on my blog, Two Tiny Tomatoes. We’ve been baby led all the way and all the food that Dave and I eat the Robot eats too.  We like to make home-made tasty food that we can all eat.  Lasagna, bolognaise, pasta sauces to name but a few.   Join me on a tomato exploration to see if we can widen out tomato repertoire…

This week I’m starting off with;

Tomato Chicken with Rice and Kale

We often buy a free range chicken to cook whole and use the chicken bits over a few days.  If I’m feeling up for it I also make my own chicken stock with the carcass, it makes soups yummy.  This is a really simple recipe and can be served with a variety of vegetables and sides.  Rice is good for the Robot because he can just scope it up and shovel it in.


  • Onion – chopped
  • 1tsp Ground Cumin
  • 2tsp Coriander
  • Cooked chicken strips
  • 400g Can of chopped tomatoes
  • 1tbsp of Tomato Puree

Fry the onion until soft.   Add the spices and cook for 2 minutes stirring occasionally.  Add the chicken strips followed by the tomatoes and the puree.  Bring to the boil, cover then simmer for 15 minutes.   Serve warm with your sides.

  1. Yummy, i’ll make this for sure. My daughter is 14 months now and she loves her food. We still had a stack of Ella’s Kitchen pouches in the cupboard from when she was a baby so rather than waste them we quite often make some spaghetti and stir through the pouch as a quick mean when we are short of time. Waste not, want not! #FamilyFun

  2. Oh I do like a good tomato dish too and this looks yummy! And the fact that it’s easy wins it for me, as much as I’d love to be able to do more advanced cooking on a daily basis, it’s just not happening at the moment. There is a certain little someone demanding most of my attention, don’t think that’ll end anytime soon 😉

  3. Looks yum. Tomato based dishes are a staple in my house. My basic tomato sauce is fry onions and garlic, add carton/jar of passata and three quarters of a cup of stock. Reduce for about 20 min then add whichever herbs/spices/veg fit with the meal. For pasta dishes I add in a teaspoon or two of pesto as well, delish. One of my kids favourite is the basic sauce poured over chicken or quorn (I’m veggie they’re not) then covered in grated cheese and baked for 20min and served with rice (I add chilli flakes for the adults). Not going to win any awards but it’s a big hit here x
