Leftover Lamb Stirfry

This is another of my favourite go to ideas.  It doesn’t have to be Leftover Lamb, it is just this fits very well the letter L!  Plus stirfrys are quick and easy

Ingredients 

  • 2 garlic cloves
  • 2cm fresh ginger
  • baby corn, halved
  • yellow pepper, slices
  • Broccoli
  • 3tbsp sweet chilli sauce
  • 2tbsp tomato ketchup
  • 3tbsp light soy sauce
  • 100ml water
  • leftover lamb

Heat the oil in a wok or large pan, add the garlic and ginger and cook for 1 minute.  Add the baby sweetcorn, pepper and broccoli and cook for 3 minutes.

Pour in the sweet chilli sauce, ketchup, soy sauce and 100ml of water and bring to the boil, cook for 5 minutes.  Add the lamb in near the end so it has time to heat through.

We served with leftover rice that got tossed in at the last-minute

Anything with rice at the moment is a big hit with the Robot.  He likes to shovel it in his mouth, generally missing but he tries. Every lumpy bit of vegetable gets thrown on the floor, I’ve started cutting veg up really small so it will be shovelled like the rice.  This was a big thumbs up with the parents too.
