Ital is vital. It’s from Caribbean Food Made Easy by Levi Roots. I’m copying the recipe out for you, but amended slightly as we do it a bit differently now. Here is all the credit for it.
- 1ltr of carrot stock. We use 3 carrots and veggie stock.
- 2 sweet potatoes Cut
- Can of chick peas
- Can of coconut milk
- Small hot chilli
- 2cm root ginger
- 1 garlic clove
- 1tsp Thyme
- handful of spinach
- Coriander & Sour cream to garnish
Put the carrot juice in a medium sauce pan and bring to the boil. Add sweet potato, chickpeas, coconut, chilli, ginger, garlic and thyme. Simmer for 10 minutes covered until the potato is soft. Add the spinach in 5 minutes before the end cook time. Mash the soup up or leave chunky as you wish. Add the butter and season with black pepper if liked. Garnish with coriander and drizzle of cream. I clearly forgot the coriander:
The Robot likes soup but wasn’t too keen on this. We didn’t over spice it but maybe this was why. It’s an easy soup to make and always delicious. We do many variations and often use squashes or pumpkin. I think as long as the ginger, chili and spices go in then it generally counts as ITAL.
