Frittata – Store Cupboard Favourites
My food post this week is Frittata. The best thing about Frittata is that you can put almost anything in it, that is why it’s one of my favourites to chuck together with the random assortment I have in my store cupboard!
- 6 eggs
- splash of milk
- cheese – for sprinkling on top
Boil the potatoes and leave them to cool on one side, unless you are using leftover potatoes already cooked, slice them. In a metal frying pan fry the onions and garlic until soft, add the chorizo, mushroom, peppers and sliced potatoes in until all is cooked. Whisk the egg and the milk. Add this to the frying pan, mix all the ingredients so that they are all covered in egg. Cook unitl the egg is set, test by inserting a knife, it should come out clean. Sprinkle your cheese on top of the mixture and put the frying pan under the grill untill the Frittata and cheese has browned on top. We served warm with salad.
Like above, you can add anything into the Frittata, as long as you have eggs, it’s a good go to meal! How did baby Robot get on? It’s hard to say, he was going through a “I don’t want to eat anything” stage. He had a little nibble but it was no “Oh my Gosh, this is amazing!” shovel in the mouth moment. If I replaced all these ingredients with yoghurt, that’d be a different story! How did Dave and I enjoy the meal? We loved it!
