Egg Fried Rice

Egg Fried Rice

I’m flying solo on this recipe, I’m not following a recipe so it should be an interesting one:

Ingredients

  • 200g Rice cooked cooled
  • Half a pepper
  • Small sweet potato
  • A few sugar snaps
  • broccoli florets
  • eggs x 3

If you haven’t already got the rice cooked and cooled do this first.  Cool rice supposedly sticks the egg together better.  Fry the vegetables off in a pan until cooked, put them to one side.  Put the rice in a pan/wok to heat for a couple of minutes, make a hole in the middle and break the eggs into it.  Start to stir the egg mixture into the rice ensuring it is well covered and mixed.  Add your vegetables into the pan/wok and stir until all looks cooked.  Serve as a side or have as a main meal.

This was a bit of a random store cupboard meal, and I just put in what we had.  Dave came home and added chorizo to his portion.  The Robot seemed to eat a little bit but it hasn’t been my most successful baby led meal!  Most of it ended up on the floor and to be honest, I was a little disappointed in it too, it was a bit tasteless.  If I were to make this again then I will probably seek out a recipe to follow and use ingredients that work.

Normally when the Robot has had rice meals before he absolubtly loves it, but it’s normally a bit more sloppy and juicy as per my Dahl last week.  This was quite dry so I think this why more ended up on the floor.  Don’t be put off from making egg fried rice just because my experience wasn’t as good!!  It looks colourful though!

#ABC123 is a challenge I have set myself to complete 26 weeks of posts, every week a different letter of the alphabet.  This week was the letter E.  Week 5 of the challenge and I feel like I’m in the swing of it now.  I pondered on E for a while, I knew it was going to be something egg but it wasn’t until I saw Honest Mums post on Egg Fried Rice that I was inspired to go down the egg fried rice route.  Thanks for the inspiration Honest Mum!

  1. Looks good sweet – maybe add some herbs next time if you felt it was a bit dull. My bubba loves Basil and also randomly she lovely cumin cous cous ha ha ha. Also as long as it isn’t a lot you can always add the tiniest bit of salt and pepper for some seasoning too.
    Love the ABC challenge though and yes gotta love the inspiration from Vicki x
